  • Use a fork to mix the eggs until the crumbs and whites are fully mixed, being careful not to inhale. Season with salt, and pepper if used.
  • In an 8 “nonstick pan over medium heat, melt the butter. When the butter is foam (but not yet brown) add the eggs to the skillet. Using a fork, with the lines facing up, move quickly with one hand while moving the pan with the other. In 1 to 2 minutes, the eggs will resemble a soft scramble. While using your fork, spread the eggs evenly across your pan, and scrape off any excess eggs from the sides of the pan.
  • Remove the pan from the heat and lift the skillet with its handle. To start at the top, use your fork to gently roll the omelet over it until it is almost completely folded. Using a fork, press the omelet over the edges of your skillet until the open side rises slightly, then fold the upper side to meet the other curved edge.
  • Hold the skillet over the serving plate and place the omelet next to the seam of the plate on the floor.

As the eggs begin to set, use a rubber spatula to scrape the cooked edges into the center of the pan. Tilt the pan so that the uncooked egg falls on the edge of the pan.
  • Once the bottom is set, but the top is slightly wet, sprinkle the cheese and chives on one side of the omelet. Fold the other side over the cheese and slide the omelet on a plate.

  • 2 tbsp. extra-virgin olive oil, separated
  • 1 onion, finely chopped
  • 2 bell pepper, finely chopped
  • 8 oz. button mushrooms, thinly sliced

  • 1/2 lb. sirloin steak, slightly cut
  • 6 large eggs
  • 3 tbsp. milk
  • 1 c. broken provolone
  • 1 tbsp. butter

DIRECTIONS

  • In a large saucepan over medium heat, heat 1 tablespoon olive oil. Add onion, pepper, and mushrooms to salt and pepper, and cook until soft, about 10 minutes.
  • Move the vegetables to one side of the skillet and burn the remaining tablespoon of oil. Add the steak to the empty side of the skillet and add salt and pepper. Cook until the undersides form a crust, about 2 minutes, then stir in the steak and cook for 1 minute over medium. Stir in the steak and vegetables, then transfer to a plate.
  • Make an omelet: In the same pan over medium heat, melt the butter. In a small bowl, whisk the eggs and milk and season with salt and pepper, then pour half of the egg mixture into the skillet.
  • Cook until the eggs begin to set on the edges, for about 30 seconds, then use a spatula to gently lift the edges, allowing the uncooked egg to flow through the center. Once frozen, add a layer of provolone to one side of the omelet, then the top cheese with half the steak mixture. Top with another layer of provolone, then cover the skillet with a lid and cook until melted, 1 minute. Use a spatula to turn the top side to cover. Repeat with the remaining ingredients of the second omelet.
