  • Take the chicken drumsticks and wash them thoroughly. Dry them with a kitchen towel. Make the same cuts on the chopsticks so that the marinade soaks in well.
  • Take the bowl. Add marinating ingredients like hung curd, Kashmiri red chili powder, turmeric, pepper powder, amchur masala, coriander powder, garam masala powder, and crushed Kasuri methi. Add lemon juice, salt, and then a little oil. Mix the ingredients to form a fine paste. Take the drumsticks and coat them evenly with the marinade, including the cuts. Set the chopsticks aside for 30 minutes. You can also marinate the chicken overnight using these ingredients.
  • Take a grill pan and brush it with oil or butter. Heat a pan over medium heat. Place one or two chicken drumsticks at a time. Using tongs, turn the drumsticks every few minutes until they are evenly browned on all sides. Brush the chopsticks with oil or ghee at regular intervals.
  • According to the traditional method, tandoori chicken has a smoky flavor when it is cooked over a tandoor fire. You can get a similar taste of smoked tandoori chicken at home. Take a small piece of charcoal and heat it in a small steel bowl. Then add 2 or 3 drops of oil or ghee to it. Once the charcoal starts to emit smoke, place it in the pan with the chopsticks and cover it with a lid.
  • After a minute, remove the lid and remove the heated charcoal. The smokiness of the coal had to seep perfectly into the drumsticks. Squeeze some lemon on the drumsticks and serve with onion rings or salad and basmati rice or naan.
  • To prevent the chicken from burning, always glaze the pan with ghee or oil. To check if the tandoori chicken is cooked properly, cut a piece off the chicken. If the meat falls off the bone quickly, it is evenly cooked.
