Nachos are made with mechanics in Mexican, Tex-Mex, and American cuisine. But few people know the origin of this basic game day (or Oscar day … or Tuesday) basic! In 1943, some wives of U.S. soldiers stationed at Fort Duncan in Eagle Pass, Texas, were on a shopping trip in the border town of Piedras Negras, Mexico. They stopped at Victory Club for dinner, but the restaurant was closed. Not wanting to disappoint his clients, the maître d’, Ignacio “El Nacho” Anaya, was determined to drive them to something. He succeeded in what was left in the kitchen: tortillas, cheese, and jalapeños dipped in saltwater. He cut and fried tortillas into chips, coated them with cheese and jalapeños, and served what would be called “Nacho’s Especiales”.

Ingredients Needed

Tortilla Chips – Use regular tortilla chips and not small and clear chips. They will break and will not hold on to the toppings!
Taco Seasoning – Feel free to use the package from the store but I prefer homemade taco spices!
Fried Beans – I use a standard 14 cans of fried beans. The recipe only needs 1/2 can of the beef mixed with the meat for the rest.
Feel free to add more beans to the mixture if you like or keep them to add to nachos later.
Nacho Cheese Sauce – I like this melted cheese, smooth, and creamy cream for this recipe instead of melted cheese in chips.
They do as they do at Taco Bell!
How to make Nachos Supreme
First: Add beef, fried beans, taco spice, and water to a large saucepan and cook over medium heat until the beef is no longer pink. Remove from heat and set aside.
Second: Place the tortilla chips on a baking sheet lined with parchment paper. Preheat the oven to 400F. Sprinkle with naro cheese sauce over chips and place in oven. Bake for 5 minutes or until the cheese has melted.
Third: Remove from the oven, then add the ground beef mixture and spoonful of beans over melted cheese.
Fourth: Top with chopped tomatoes, sour cream, and chopped green onions. Enjoy!

Excellent types of nachos cheese
This 5 cream cheese sauce is VERY GOOD at Nachos Supreme. It covers all the bites with a creamy texture and does not leave the chip dry.
But if you are not in the cream-style cheese, then sliced cheddar cheese, Monterey Jack, or Cotija cheese are some great options! Your options are limitless here!
Can I add new ingredients before baking?
Meat, beans, chips, and cheese are all delicious when hot! So keep those ingredients together.
Fresh herbs, sour cream, salsa, guacamole, avocados, or anything else that is too cold, needs to be cold. So keep those ingredients in place before serving.

Tacos Tips & Tips
- You can use grated cheese instead of Naro cheese sauce, but I don’t think they taste like a Taco Bell recipe that way.
- Use fried black beans instead of the usual ones if you like.
- I like the homemade taco spice mix but use your favorite
- Background as a professional! One layer of toppings is great, but add a second or third layer to make it look good!
- Make cleaning easier by attaching your baking sheet with parchment paper or aluminum foil.
