Methi Malai Cranberry Chicken
Ingredients
- 250 g of chicken, cut into large pieces
- Salt, to taste
- 1 cup cranberry puree
- 1 teaspoon of red chili
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 teaspoon of cumin powder
- 1 tsp chaat masala
- 1 teaspoon of corn flour
- 1 tablespoon of dry fenugreek leaves
- 1 tablespoon of besan
- 1 teaspoon of ginger
- 1 teaspoon of garlic
- 1 cup cream
- ½ cup Greek yogurt or hung cottage cheese
- Butter spread on top
Method
- Mix all ingredients except chicken and butter.
- Marinate the chicken with the marinade.
- Rest for 2 hours.

Ingredients
- Kabuli channa cooked 1 cup
- Chopped onion 1 tbsp
- Chopped tomatoes 1 tbsp
- Chopped cranberries 2 tbsp
- Chopped mango 1 tbsp
- Chopped coriander 1 tsp
- Mint leaves little
- Bandage
- Cranberry sauce
- Tamarind puree
- Salt
- Pepper
- Olive oil
- ginger
- Green chili
- Sky
- Sev bhujia
- Bhel poor 4 to 5
Method
Mix the dressing ingredients and set aside.
Mix all the ingredients for the chaat.
Garnish with sky bhel.
Cranberry Ka Virgo
Ingredients
- Fresh frozen cranberries 1 cup
Dried cranberries 1 cup
Water 5 cups
Cumin powder
Elaichi powder
Black salt
Garam Masala Powder
Green chili
Jaggery
Soda
Mint leaves
Chia seeds
Method
Bring all the above ingredients to a boil for 40 minutes until most of the liquid has been reduced.
Pure and cool.

This Mango Channa Chaat is a blend of flavors and textures from the sweetness and silkiness of ripe and raw mangoes, the protein textures of cooked chickpeas and the various flavors of spices and toppings.
As with any chaat (Indian street food), this can be customized and spiced to personal preference. A little bit of that and a little bit more of that and you have a flavor bomb with every spoonful.

What you need to make Mango Channa Chaat

- 1 ripe mango
- 1/4 cup cooked chickpeas (see how to cook chickpeas in bulk and store them here)
- 1 tsp chaat masala
- 1/2 onion (minced)
- 1/4 tomato (diced)
- 1/4 cup yogurt
- 1/2 teaspoon roasted cumin
- 1 teaspoon red chili powder
- 1/2 teaspoon tamarind-date chutney (Imli Khajur Chutney)
- 1 tsp green chaat chutney
- 1/4 cup sev (fried gram flour noodles)
- 1 teaspoon coriander
- 1/4 cup raw mango (op.) – grated

How to make Mango Channa Chaat
Mix Chaat masala powder, Red Chilli into green chaat chutney. Keep aside
Arrange the chickpeas on the bottom of the plate.
Add sliced ripe mango, onions and tomatoes. Mix well
Drizzle with whipped yogurt and tamarind-date chutney
Top with sev and chopped cilantro
Top with grated mango, if using, and serve immediately.
